Pastry Melts
Makes 16 balls
Ingredients:
-1 sheet of puff pastry
-Philadelphia/Mainland cream cheese
-castor sugar
-mozarella cheese
-pistachio nuts, roasted and finely ground (blender)
Method
ok, cut circles out of the pastry using a small cup (no bigger than 6cm) the pastry should come out with 16 circles.
get maybe 2 or 3 tablespoons of the cream cheese, a tsp of sugar, some mozarella cheese (no too much), and some pistachio nuts and mix well in a small bowl.
place some of the filling in the center of each pastry circle, close letting tips meet so it looks like a semi circle then bring the ends together so it looks like a hat and close firmly..
do that for all the circles until either the pastry or filling runns out
then deep fry them in clean vegetable oil until the whole ball is golden brown (keep an eye on them because they cook fast)
put the balls on absorbant paper towels so the oil goes out, then dust/coat with castor sugar.
serve with some pistachio nuts sprinkled over it and with whipped ceam if desired...

Mmm what type of bread is good for the 3esh el-saraya?
I can't believe i'm giving u this recipe (along with how many other ppl!) my family loves this and would kill me for the recipe LoL
Paki Halwa
1 1/4c semolina (not the fine ground kind)
2 3/4c water
1c sugar
140g butter
1/3c flaked almonds
1/3c sultanas
Place water and sugar in a saucepan and let sugar melt. Keep on low heat.
Melt butter in a pan and toss semolina through until light tan in colour. Add almonds to semolina and toast them too until it's all a nice tan colour.
Bring syrup to a boil and add sultanas til they plump up.
While semolina is on medium heat, add your syrup (don't let it splash) and stir until it all comes together.
Cover for 5 min on very low heat and enjoy!
BTW u can add a few cardamom pods and saffron threads to the syrup, I never do and it tastes the same to me!

I dunno if you have an indian grocery store near you but they sholud have the right one. Like the one in the supermarket in the green packet is no good. You should be able to tell the grains apart from one another otherwise it goes too sticky. You can use a combination of fine and coarse but the coarse one is better.
Sorry 4 the essay on semolina ;)
