FYI Jerk Chicken is lovely and if you don't want to kill your mouth with all the pepper just use regular chillies, around 6, to give some spice but not to kill your mouth.

*Ingredients:* 
• 1 x 250g pkt chocolate ripple biscuits, coarsely broken  
• 1/2 tsp ground cinnamon  
• 150g butter, melted  
• 250g dark chocolate, finely chopped  
• 155g (3/4 cup) caster sugar  
• 3 eggs  
• 3 x 250g pkts cream cheese, at room temperature</description>
			<content:encoded><![CDATA[<div><font color="Sienna"><b><u>Chocolate Cheesecake</u></b></font><br />
<br />
<b><font color="Sienna">Ingredients:</font></b><br />
• 1 x 250g pkt chocolate ripple biscuits, coarsely broken <br />
• 1/2 tsp ground cinnamon <br />
• 150g butter, melted <br />
• 250g dark chocolate, finely chopped <br />
• 155g (3/4 cup) caster sugar <br />
• 3 eggs <br />
• 3 x 250g pkts cream cheese, at room temperature <br />
• 2 tbs cocoa powder, sifted <br />
• 1 tsp vanilla essence <br />
• 2 x 300g ctns sour cream <br />
<br />
• Dark chocolate for shaving<br />
• Double cream to serve<br />
<br />
<font color="sienna"><b>Method:</b></font><br />
<b>1)</b> Preheat oven to 170°C (fan forced oven) or 190°C (conventional oven). Spray a 24cm (base measurement) springform pan with canola oil spray to lightly grease. Line the base with non-stick baking paper. <br />
<br />
<b>2)</b> Place the biscuit, cinnamon and butter in the bowl of a food processor and process until well combined. Transfer mixture to the prepared pan. Use a straight-sided glass to spread and press mixture firmly over the base. Hold the pan on it's side and place spoonfuls of biscuit mix on the sides, press with glass, rotate pan and repeat until the sides are covered. Cover with plastic wrap and place in the fridge for 30 minutes to chill. <br />
<br />
<b>3)</b> Place the chocolate in a heatproof bowl over a saucepan of simmering water (make sure the bowl doesn't touch the water) and stir for 5 minutes or until melted. <br />
Alternatively, place chocolate in heatproof bowl and melt in microwave in 1 minute bursts. <br />
<b><font color="Sienna">Tip: </font></b> Heating for longer than 1 minute bursts will burn the chocolate.<br />
<br />
<b>4)</b> Use an electric beater to whisk together the sugar and eggs in a large bowl until light and creamy. <br />
<font color="sienna"><b>Tip:</b></font> Do not over mix as you do not want too much air in the batter.<br />
<br />
<b>5)</b> Add the cream cheese and beat until well combined. <br />
<font color="sienna"><b>Tip:</b></font> Leave cream cheese at room temperature for at least an hour to soften. If in block form, cut into smaller squares before adding to bowl.<br />
<br />
<b>6)</b> Use a metal spoon to fold in the melted chocolate, cocoa powder and vanilla until just combined. <br />
<br />
<b>7)</b>Add the sour cream and stir to combine. <br />
<br />
<font color="sienna"><b>Note:</b></font> At this point, the batter must be a smooth consistency. If you have any lumps (cream cheese), make sure these are mixed out before pouring into pan.<br />
<br />
<b>8)</b> Pour the mixture into the biscuit base and smooth the surface. Bake for 1 hour or until just set in the centre. Use a toothpick and if it is comes out clean, the cheesecake is done.Turn oven off. <br />
<font color="sienna"><b>Tip:</b></font> To prevent cracking, leave cake in oven, with door ajar, for 2 hours or until cooled completely.<br />
<br />
Cover and place in fridge for 2 hours to chill.<br />
Shave chocolate on top &amp; serve with double cream.<br />
<br />
<font color="sienna"><b>Enjoy!</b></font></div>
