If you want to make it with white sauce instead of napoli sauce then just use cream instead. Get thickened cream from you supermarket. Add as much as you need. Do you know how to make carbonara? I'm guessing that it would be the same thing. What are the ingredients anyway? I found ingredients on line (not recipe though) and it says that it has mushrooms, bacon and cream. Of course you'd replace the bacon with something else. Anyway, isn't that what carbonara is?

It seems that in carbonara you put eggs but not in bosciaola. My guess is that you'd make it the same way. Cook your mushrooms and meat (halal salami or suasage or whatever), add garlic or spring onion (optional?), when everything looks cooked add the thickened cream. If the sauce is too runny, add some corn flour. From memory you don't just put the corn flour in the sauce, you have to mix it with water first so it looks like a runny paste. I'll ask my sis insha'Allah. She's a qualified cook.

Me again!!! hehe
I found a recipe insha'Allah. Just replace the ham with a halal alternative. And use any type of pasta you like.
Pennette alla Boscaiola
1 lb pennette (we suggest either Pennette Barilla
or De Cecco; if you can't find pennette, any kind
of maccheroni will do)
6-7 oz of fresh mushrooms or 5 oz already cooked mushrooms
5 oz of halal meat of your choice (salami, etc)
1/2 cup of cream or 1/2 glass of milk
1 tb grated parmesan
salt
butter
Fill a pot with water, salt it and bring it to boiling
temperature, then cook the pennette or maccheroni (for
as long as suggested on the packing). Meanwhile put some
butter in a pan, wait till it melt and add fresh mushrooms
(or you can use ready mushrooms) thinny sliced and bits of
salami. Let them cook for ten minutes (till they brown).
When ready strain the pennette and add them to the mushrooms
and salami; add also the cream (you can use a little milk
instead if you prefer a lighter dish) and the parmesan
cheese. Mix the ingredients at low flame for a few minutes and serve.
Serves 4.

When I make carbonara I put the pasta after I've made the sauce.
I deleted where it said to use ham.Last edited by umm_mohammed; 03-Jul-2004 at 08:38 AM.

Evaporated milk can be used for alot of things.. You can find it in the powder milk/condensed milk section. At least I think you mean evaporated milk? Never heard of evaporated cream.

Assalam alaikum,
I picked up the latest copy of the cooking magazine Super Food Ideas and the recipe featured on the cover just happens to be low fat pasta boscaiola. Inshallah will type the recipe up. Just replace bacon with a halal alternative or something else of your choice.
Serves 4
400g fettucine pasta
3 teaspoons cornflour
1 cup Carnation Light & Creamy Evaporated milk
1/2 cup salt reduced chicken stock
125g bacon
2 garlic cloves, crushed
1 brown onion, finely chopped
olive oil cooking spray
150g button mushrooms, sliced
1/4 cup flat leaf parsley, chopped
1. Cook pasta in a large saucepan of boiling salted water, following packet directions, until just tender.
2. Blend cornflour and 1 tablespoon of milk to a smooth paste. Add remaining milk, stock, and salt and pepper.
3. Heat a non-stick frying pan over medium-high heat. Add bacon, garlic and onion. Spray with oil. Cook, stirring, for 6 minutes or until golden. Add mushrooms. Cover. Cook, stirring eery minute, for 4 minutes or until mushrooms are tender.
4. Drain pasta. Set aside. Return saucepan to stovetop over medium heat. Add milk mixture. Cook, stirring, for 2 minutes or until sauce just comes to the boil. Add pasta, bacon mixture and parsley. Reduce heat to low. Toss u8ntil heated through. Season with pepper. Serve.
