    Ok ladies and gentlemen ... here is the recipe for the Butterscotch and Apple Sponge. It takes some time preparing, but trust me, well worth the wait and effort insha-Allah I posted this in another thread but i think it deserves its own and makes it easier to search for.

    STEP 1
    - 5 granny smith apples
    - 60g butter
    - 1/2 cup brown sugar
    - 1/3 cup cream

    Peel and core the apples and cut into 8 pieces or bite size pieces. Melt butter and dissolve suger, then add cream and cook for 1 minute. Add apples and cook for 7-8 mins or until tender. Place apple mixture in base of oven proof dish.

    NB: I find the sugar NEVER dissolves until AFTER I have added the apples.

    STEP 2
    - 100g butter
    - 1/2 cup sugar
    - 1 1/2 cups self raising flour
    - 1/2 cup milk
    - 2 eggs, lightly beaten

    Place above ingredients in a food processor and mix until just combined and then add 1/2 cup of almond meal. Smooth dough over apples, or just dollop it evenly across and it will spread out as it's baking.

    NB: If the dough is a bit tough, then I usually add a touch more milk.

    Cook on 180 degrees C for 30-35 mins or until golden brown.

    I suggest you serve it warm-hot while that yummy butterscotch is still in the form of a liquid

    WARNING:If you're thinking of using apples other than granny smith then let me stop you right there! I tried it once and the flavour was not as good cause the juice from the apples really contributes to the taste ... but ... if you wanna be cheap ... go ahead ... lol

    Doesn't it derive from the word "saha" meaning "health", "tan" at the end meaning "twice". So I guess it translates to "health twice" lol.

    I'd say 8 servings. I use a 20x30cm rectangular dish to make this. I suggest you just dollop the dough on top instead of spreading it, cause the more you spread the more it will sink down into the apples and probably take longer to cook through. It will spread in the oven if you just dollop it evenly across.
