This is the first time i've actually made the dough, and it is surprisingly easy.
For those who would like to try it here are the ingredients:
1kg plain flour
1 sachet instant yeast
1 tsp sugar
1/2 tsp salt
2 cups warm water
2 cups melted clarified butter at room temp
Method:
Mix yeast and about 1 cup of water + sugar.
Add flour and butter
Mix well (should look a bit crummy)
Add remaining water and mix the SURFACE in a circular motion. (so lay your hand flat on the surface and mix as if you were wiping a surface)
DONT KNEAD!
COver well and allow to rise in a warm place.( i am to this stage atm)
The filling for this one should be vanilla turkish delight and a small ppiece of toasted hazlenut
The final product after shaping and baking is sprinkled with icing sugar.
Should look something like this. (my own pics to come after I finish insha' Allah)
NOte: this isnt the same as ma3mool *which is made with semolina*. it is similar but different in taste/texture.

hmmm...that method is a little different to the traditional kahk recipes I grew up with, but the final product looks good.

Palo, that is anything but ka3k. I just Googled kahk and it seems to be an Egyptian sweet. Seems to be similar to ma3mul.

sonson: you mean the filling is different or the actual dough? I think the dough depends on who is making it (we use clarified butter, others use samn.. some use more, some make with baking powder instead of yeast.. but they are all fairly similar)
Egyptians call it kaHk (whether correctly or incorrectly)
Fatima: we put sesames on the one with dates inside only.
Here is the finished product minus the icing sugar:


Mum told me they get better and softer with time *about a week* so should be nice in time for eid insha' Allah.
I'll post step by step instructions later if anyone is interested insha' Allah.. it's not as hard as i thought it would be.

I didnt take pics of the dough making process... but basically you get a slightly 'marbly dough' that doesnt stick to the bowl.. dont knead and shape too much to make it even.. so long as it is stuck together it should be ok insha' Allah.
Once doubled in size you begin shaping.
Depending on the size of your mold.. take approx 1.5 tablespoons worth.. make a round/smooth ball and flaten slightly.
Take some turkish delight and fill with about 1/3-half a roasted/peeled hazlenut. Smooth the turkish delight (you need approx 1/4-1/3 of the squares shoen below, depending on how large you are makign them) into a ball.
(dust off sugar before using)
Fill inside the dough . Fold the dough and seal well by pinching the ends. Make into a round ball again and place in the mold.



Place in baking tray and allow to rise again. Then bake until lightly golden (dont bake too long as you dont wnt it to go crunchy)

Kahk = ma3moul. We'll be making these tomorrow inshaa'Allaah. We make them with date and walnut fillings. I personally don't eat it, but the smell as they are baking is awesome mashaa'Allaah.
I plan on making those London biscuits that sis fairuzizman posted inshaa'Allaah. I might make them tomorrow during the day.What is for you will not pass you and what passes you is not for you!

Here's the recipe.. they seem easy enough!
The ingredients:
- 250 grams butter
- 60 grams icing/castor sugar
- 360 grams multi purpose flour
- 30 grams cake flour mix
- 10 grams custard flour mix
- 1 tea spoon vannila extract
- 2 egg yolks
- 500 grams almond (roasted and cooled)
- 500 grams (your favourite) semi-sweet cooking chocolate & 1 table spoon butter (to be melted in a double boiler)
- some almond bits
How to make it:
(1) Beat sugar and butter till all mixed and fluffy
(2) Add egg yolks to the batter, fold a bit more.
(3) Add vannila extract, and fold some more.
(4) Add all the dry ingredients (flour), mix well into a soft dough.
(5) pinch a thumb size amount of dough, place inside it the roasted almond, close over it and shaped it into a longish ball.
(6) Bake for about 17 minutes in 300 F oven.
(7) Totally cool the cookies, before dipping it all in melted chocolate.
(8) Place the cookies in paper cup, and sprinkle on top of it with almond bits.
(9) Done

I love ma3mul, especially the ones with walnuts. One of my favorite all-time sweets and a highlight of every Eid.

I especially like it when they've settled for a couple weeks (they don't go off for ages and my mum always makes stacks, alhumdullilah
) and the sugar melts in wrapper.

These are my trial biscuits.. I made this as a first batch to see how they would turn out.. I made them a little too big so the next batch I made smaller. The chocolate I just made quickly.. I didn't dip the whole biscuit in.. just spread some over the top of it, and then topped it with crushed almonds.
I must say though, they are delicious Alhumdulillaah. I've baked the rest of the biscuits, just need to dip them into chocolate inshaa'Allaah. I'll be doing this later after I've helped mum with the ma3moul.What is for you will not pass you and what passes you is not for you!
