I wanted to make Chicken Parma too but I ended up making "Orange Chicken with green bean and mint couscous".

It's got ginger, mint, fresh orange juice, orange zest, lemon juice, honey and currants.

It fills you up but subhanAllah I thought it was gonna be so flavoursome yet there was not one bit of flavour so I was a bit disappointed. Alhamdulillah it's healthy though and full of vitamins

I didn't read on the side there was a comment saying "when I have more time I'll marinate the chicken in the citrus, ginger and honey". I would also do that and I would put much more than the recommended measurements. It is really nice just expected more flavour.

I made something nice yesterday. I was hungry, but there was nothing obvious to eat at the time. So I took some assorted nuts (or any type of nut will do), and I put them in a bowl. I took some honey, any clear honey will do, I just happened to have black seed honey at the time. I put a tablespoon or so of it over the nuts. I then got some slightly roasted sesame seeds and sprinkled them above the honey, and then I got some coconut shavings to put above that. Since I wanted to mix it and not get my hands too sticky, I put lots of slightly shredded oats above the whole thing and then mixed it so that it would cover the honey well and not get it all over my hands.

Made for a really yummy snack and has a lot of ingredients in it that are good for the health. You could also add cinnamon, but that will change it completely.

Had iftar at my mums yesterday and she sent enough leftovers with me so I don't need to cook - afghan rice, kofta curry, black chickpea curry, yoghurt, salad etc. She had spring rolls, vegie samosas, dahi bade etc as well. Going to have some znud as-sit now. yummo.

Tonight my wife made the best meat and pepper pies with caramalised onions I've ever tasted mashaAllaah. Served with mash and gravy and some steamed veggies.
