Ingredients
- 1 onion, chopped
- 1 1/2 tbs garlic & ginger puree
- 400g can chopped tomatoes
- chilli powder
- pinch of sugar
- 30g ghee or 2 tbs oil
- 125ml water
- 1 tbs tomato puree
- 40g butter, chopped
- 1/2 tsp each of garam masala, ground cumin & ground coriander
- 8 cooked tandoori chicken pieces [i cut up a fillet into bite size pieces]
- 4 tbs cream
- salt and pepper
- chopped cashew nuts and fresh coriander sprigs to garnish
Method
Put the onion and ginger into a food processor and whiz until a paste is formed. Add the tomatoes, chilli powder, sugar and salt and blend again.
Melt the ghee in a pan. Add the tomato mixture and water and stir in the puree. Bring to the boil, then reduce and simmer for 5 mins until the sauce thickens.
Stir in half the butter, the garam masala, cumin and coriander. Add the chicken and simmer for about 10mins.
Lightly beat the cream in a small bowl with some of the hot sauce mixture, then beat into the pan. Add the remaining butter and mix through. Garnish and serve with rice.

Yum! Sis, would you know if i can use an alternative to garam masala? I can't find it here in Lebanon.

Jazakillahu khairan sis. I thought garam masala was a type of spice, not a mix of different types of spices. I'll try that some day inshallah.
