    Please share a tried and tested easy red velvet cake/cupcakes recipe with icing.

    Tried and tested many times. Although for the icing, I use a different recipe.

    Cream Cheese Frosting
    250g cream cheese, room temperature
    250g butter, room temperature
    1 1/2 teaspoon vanilla
    4 1/2 cups confectioners’ sugar

    1. Sift sugar and set aside.
    2. Beat cream cheese and butter on high until creamy. Add vanilla.
    3. Then, add the sugar in batches. Scrape down the sides in between each addition.
    4. Frost away.

    Made these today. How much red food colour do you use? I emptied the 7ml bottle and it turned our maroon/brown instead of bright red What did I do wrong?

    Sis UmmNRZ, I'm not sure of the method you used but it's most likely that the colouring was not evenly distributed throughout the batter. The easiest way to get even distribution is to mix the colour with a whisk into the liquid being used. Then add a third of the flour mixture to the eggs & butter mix, followed by half the liquid, followed by another third of the flour, then the other half of the liquid and then the last third of flour. Mix well to combine between each addition.

    Give it another go and it should work for you inshaAllah.
    The above method is what I use and it's never failed on me alhamdulilah. Also not sure what colouring you've used but I find that the gel food colouring is more effective than liquid food colouring.

    Where do you get gel colouring from? The way I mixed was all wet first and then fold into dry ingredients. Will give your method a go next inshaAllah.

    Sis UmmNRZ, I get mine from a cake supplies place but you can find them in Spotlight or there is a party supplies place on Somerton Road - "Allegria".
    I purchase the Americolour brand - colour "Red Red". Wilton brand also has gel colour - "Christmas Red".

    Muslim Princess , that is really good!! What type of piping bag did u use ? I bought a hard plactic one & was mishandled by kids & it cracked.

    I used just a normal disposable one from safeway that also came with the nodules the $2.95 one. I don't think my frosting was firm enough because I initially wanted to make a rose shape. Dealing with piping bags are actually quite tricky.

    Cream cheese frosting can go runny very quickly if it's over beaten. I suggest to stop beating it as soon as it becomes smooth and you should have a stiff, piping consistency.
