    Last night I had my parents, sister and brother in law over.
    We had
    •parmigiana
    • roast veggies, (potatoe, pumpkin, carrots, peas n corn)
    • home made garlic bread
    • mini pizzas and ..
    • Greek salad

    Tonight we're at mums for soup, tesse'iyeh and kabseh! My mums kabseh rocks mashallah !

    Najah - I was trying to work out who mentioned that dish lol. How do you make that? and which zucchini do you use?

    Marinated chicken pieces that are being oven-cooked as I type, and Su Böreği (literally Water Borek) which is pastry filled with feta cheese and parsley. My mum makes the pastry herself so it's extra nice!

    You can probably tell I'm excited; taking photos and all... the first one's cooked now the second one is in the oven.

    OMG your mum's kabse does rock mashaa'Allaah! Yuuuuuummmmmmmmmm.

    Oh yeah, better share what I'm having. Burgers and sausages and kefta on the barbie. I'm eating at my grandparents place, my mum's making curry (which I don't like.. well.. not her version anyway lol)

    For those of yoy who like fish and want a quickneasy meal. If you buy fish from Woolworth, they marinate it on the spot for you in a sealed bag , and you choose whatever marinade you like. I tried a lime chilli sauce,was so nice!

    it was a busy day today, so aswell as the fish , I made tortellini with a creamy mushroom and sundried tomatoes sauce. macarona laban for kids , garlic bread and a tray of curly fries lol . it was one those rushed meals but everyone gobbled it down alhamdulillah

    My stomach feels so much better without it - I am a bit picky when it comes to food with garlic or onion (feel sorry for my future wife ). However, I don't mind it with seafood dishes such as these :
    I could easily gulp down half a dozen of these - protein + omega 3 + good fats - I need to bulk the weight on !!!

    any fish you choose you get the sauce marinade for free. I dont remember the name if the one i got , it was similar to basa fillets and it was on special

    I got caught up an forgot why I came in here for. So I'm going to make a cheesecake for desert tomorrow but I don't have a cheesecake tray. Does anybody know if cheesecake can be made in a normal cake tray?

    Fatima: You use the white zucchini with the light green coloured skin, you can get those dark green zucchini, but I've never used it so I don't know how the taste will turn out. This recipe is a bit hit and miss, you gotta fine tune it to your taste buds, but here is how I make it which my mum taught me to do:

    1kg white zucchini (I use rougly 5-6 smaller size ones or about 4 medium size)
    1 litre youghurt + 1 litre water
    2 tbsp cornflour diluted in 1 cup water
    3-4 cloves garlic
    small heap of dried mint
    salt to taste
    egg noddles + jasmine rice.
    roughly 200-250 gms lamb mince + pine nuts if you like them


    - Cut the zucchine into quarters lengthways and cut up like you would cut up for tzatziki dip (small pieces) THey turn out triagnle shape
    - Fry the zucchini pieces in some oil until start to get soft, whilst they are cooking, season with salt and pepper.
    - Put aside zucchini pieces once ready. Don't overcook it till completely soft because they will cook more in the yoghurt

    - Put 1 litre of yoghurt and add 1 ltr of water
    - Add the cornflour/water mixture into the youghurt
    - Continue stirring till it starts to bubble, u must continue to stir it whilst on heat or else the youghurt will curdle
    - Once it starts bubbling add the crushed garlic cloves, dried mint and salt
    - Cover pot with lid slightly open or else it will start foaming
    - Cooking time will vary, but it generally will take about 30-45 mins, you need to watch out for it starting to thicken up a bit. It will probably look more watery at the start because it thickens up better the next day.
    - Add fried lamb mince into the yoghurt once it is done


    - To make the rice crush about 3 balls of egg noodles and fry in butter till golden, make sure u stir them because they will brown very quickly and burn if your not careful (some packets of egg noodles come in balls)

    - Add 3 cups of jasmine rice with 7 cups of water. I use the cup that comes with the rice cooker, so bear that in mind. Add salt as well.

    This recipe above is plenty for 4 adults MashaAllah, or either 2 adults and a few kids, depending on the serving sizes.

    And thats how I make it. We always have left overs, more yoghurt and zucchini, but u can always make more rice. It's very easy once you have the hang of it.
