And as for the one who recites with difficulty, stammering or stumbling through its verses, then he will have twice that reward.”

Default Cinnamon Buns - 22-May-2008, 05:27 PM

Cinnamon Buns


For the dough you'll need:
  • 1/4 cup warm water
  • 1 little package active dry yeast
  • 1/3 cup sugar
  • 3/4 cup milk
  • 4 Tbsp. unsalted butter, plus more for greasing
  • 3 large egg yolks
  • 1 Tbsp. finely grated orange zest
  • 1 1/4 teaspoon. salt
  • 4 to 4 1/4 cups all-purpose flour, plus more for dusting

For the filling:
  • 1/2 cup of light brown sugar
  • 1 Tbsp. ground cinnamon
  • 4 Tbsp. unsalted butter

Method:

1. Make the dough. In the bowl of an electric mixer, combine warm water, yeast and 1 tsp. sugar. Stir to dissolve and let sit until foamy, about 5 minutes. Here's what the yeast should look like after several minutes:



Add milk, butter, remaining sugar, egg yolks, orange zest, salt and 3 cups flour. Mix on low speed until blended. Switch to a dough hook and then, again on low speed, slowly incorporate the remaining 1 cup of flour. Increase speed to medium, kneading dough until smooth and slightly sticky (adding a little more flour if too wet), 3 to 5 minutes. Shape the dough into a ball and place in a large, buttered bowl. Turn dough over in bowl to coat with the butter from the bowl. Cover the bowl with plastic wrap. Let rise in a warm place until doubled in volume, about 1 hour (or 2 hours if not in an entirely warm place). After the dough has risen, punch down. Turn out onto a lightly floured cutting board and let sit 20 minutes.





2. Make the filling. Combine brown sugar and cinnamon in a small bowl. Melt butter; keep separate.

3. Roll dough out into a 12" x 18" rectangle. Brush with melted butter and sprinkle with cinnamon-sugar mixture. Starting with the long side, roll dough into a cylinder. Place seam side down on a flat surface and cut crosswise into 15 slices.












(They should look like this but far more seperated)



5. Place dough slices, flat side down, dont croud them so they dont touch one another (they will rise and stick to one another). Cover with plastic wrap, leaving room for the buns to rise, and refrigerate overnight.

6. Remove the rolls from the refrigerator and let stand at room temperature while the oven pre-heats. Preheat oven to 180°. Bake buns until golden, 30 to 35 minutes. Remove pan from oven and immediately. Let them cool slightly and serve warm.



Icing

You will need:
  • 1 cup of powdered sugar
  • 1-3 tablespoon cream, approximately
  • 1 teaspoon vanilla extract or lemon extract/orange extract

Method:
  • Mix together sugar and enough cream to achieve a spreading consistency.
  • Add extract flavor of your choice and salt (eg;vanilla extract).
  • Drizzle over bread when still warm from the oven

They look awesome mashaa'Allaah. I wanted to make these and take them with me to a friend's house tomorrow, but since you have to refrigerate them overnight, that's not going to work

You could also add diced apples to the cinnamon/sugar mixture. Yum!

Refrigerate overnight? Pfft, i skipped that step (insha-Allah they still work!)

I made half the quantity and mine are baking in the oven as i type away.

Yes, you're right sis. Apples will go well with the filling (why didn't i think of that).

Alhumdulillah they were quite nice, but i'm not a big fan of zest so next time i'll skip that ingredient. I also found they needed a bit more sweetness so i drizzled honey on top after they were done.

I did that with my first attempt a while back too. I just let it set in the fridge for a few hours (it enables it to rise more and be more soft) but alhamdulillah still turned out nice

You can also try icing on it too, i'll edit it and put that up now

Yay! I made some today :-D but I almost burnt them LoL



I added crushed peanuts to it and thought of adding raisins but can't be bothered going out to buy some.



I also made mini buns out of the left over dough. They look better than the bigger ones LoL
